A super easy recipe for one of my favorite toppings to almost any dish - pickled red onions! It only takes about 5 minutes to prepare, and can last for up to two weeks in the fridge!

Ingredients

Servings

8

1 Whole Red Onion

1 and 1/2 Cups White Vinegar

1 Cup Water

20 Whole Peppercorn Kernels

1 Tsp Salt

2 Tsp Brown Sugar

Instructions

1

Thin Slice the Onion

Slice the red onion as thinly as possible, keeping the pieces together. Place the slices into a Tupperware when done.
2

Prepare Brine

In a small pot on the stove, add the water, vinegar and all of the spices and heat up until all spices are dissolved fully in the pot. There is no need to bring to a boil or heat any more after the spices have dissolved. Once the brine is ready, pour it into the Tupperware container that the onions are in.
3

Patience...

Now the onions are ready! Although you can eat them immediately, it's best to wait overnight for them to sit in the brine in the fridge.
