Although this takes a bit of effort to chop all of the ingredients, this pico de gallo goes amazingly with any taco night. Check out the carnitas recipe for a nice pairing.

Ingredients

Servings

8

3 Pounds Roma Tomatoes

2 Whole White Onions

1 Whole Lime

3 Whole Jalapeños

1 Head Garlic

1 Bunch Cilantro

3 Tsp Kosher Salt

Instructions

1

Gut the Tomatoes

Cut all of the tomatoes in half. Use a spoon to scoop out the soft insides and discard these insides.
2

Chop Everything...

Cut the jalapeños in half and remove the seeds and ribs (leave some in if you want it spicier). Dice the jalapeños, onions, garlic, cilantro, and gutted tomatoes. Add them all to a large mixing bowl
3

Season the Almost Pico

Add the salt to the large mixing bowl and mix it in with all of the chopped ingredients. Feel free to taste and salt accordingly. Also squeeze in the lime at this point
4

Cover and Wait...

Cover the mixing bowl and put it in the fridge for at least a few hours. The pico de gallo doesn't really come into its own until after AT LEAST 12 hours in the fridge. Enjoy!
