A super easy and healthy chickpea salad. This is a nice mix of somewhat mediterranean, while still using ingredients that are easy to find at a normal grocery store.

This salad goes well with my Pickled Onion Recipe, and can be combined for an even tastier meal!

Ingredients

Servings

6

3 Whole Romaine Hearts

7 Whole Roma Tomatoes

2 Whole Cucumbers

1 Whole Red Onion

1 Bunch Parsley

30 Individual Kalamata Olives

1 15oz Can Chickpeas

Drained and rinsed

1 Block Fresh Feta Cheese

1 Bottle Balsamic Vinegar

Instructions

1

Dice Lettuce, Onions, and Olives

Dice the romaine hearts, onions, and Kalamata olives into small pieces and add to a large mixing bowl
2

Chop Tomatoes and Cucumbers

Dice the tomatoes and slice the cucumbers into smaller pieces, and add them to the bowl. If your tomatoes are very juicy, scoop out the seeds first so the salad doesn't get watery
3

Chop Parsley

Finely chop the parsley leaves (discard the thick stems) and add them to the bowl
4

Add Chickpeas

Drain the chickpeas into a strainer from the can, wash them in the sink, remove all of the excess water, and add it to the bowl
5

Mix in Fresh Feta

Using your hand, crumble the block of fresh feta into the salad and toss everything together
6

(Optional) Add Balsamic Vinegar

When serving, add balsamic vinegar to the smaller serving bowl. Don't add the vinegar to the main bowl of salad or it will get soggy!
