Dinner
Chinese

I learned this recipe for homemade dumplings from Paul. Although there is a good amount of prep work required to get all of the ingredients ready, once the assembly has started it can be really fun and engaging to make dumpling after dumpling!

There is a bit of technique required for wrapping the dumplings, but the best way to learn is to practice! You can also follow this guide for more information on different ways to fold the dumplings.

There are multiple ways to cook the dumplings too! Although this recipe will cover the boiling method, you can also bake them on a sheet if you want to make them crispier and do it in 1 big batch.

For anyone who may be concerned: "Really well" doesn't even begin to describe the results. I made this recipe with Aiyush (and I guess Dhruv helped out too) and the result was divine.

Ingredients

Servings

12

3 Pounds Ground Pork

Get 85% or leaner

2 Heads Chinese Cabbage

Can substitute Red Cabbage

3 Packages Dumpling Wrapper

Do not use Wonton wrapper. Look for northern dumpling wrapper in the store for best results.

1 Bunch Scallions

1 Piece Ginger

2 Tsp Monosodium Glutamate

MSG Salt

1 Tsp Sesame Oil

1/2 Cup Soy Sauce

10 grams Whole Sichuan Peppercorns

1 Large Egg

Instructions

1

Chop and Prepare Vegetables

Chop all of the Chinese cabbage into small pieces and place aside in a bowl. Next, chop all of the ginger and scallions and place them together in another bowl
2

Cook Cabbage

Put all of the chopped cabbage in a large pot and bring it to a boil. Wait for the cabbage to cook (5-10 minutes) and then remove from the water. Use your hands to squeeze the cooked cabbage to remove as much water as possible, and then place it in a separate large mixing bowl
3

Prepare Sichuan Water

Add all of the Sichuan peppercorns to 0.25 L of water in a pot, and bring to a boil. Let it simmer for about 5 minutes after boiling and then take off the heat. Add this water to the large mixing bowl that the cabbage is in.
4

Create Dumpling Filling

In the same bowl the cooked cabbage is in, add in the ground pork, scallion, ginger, soy sauce, MSG, and sesame oil. Mix it together thoroughly until ingredients are evenly distributed
5

Wrap Dumplings

Now it's time to wrap the dumplings! Get a small bowl filled with water, a tray to place the dumplings onto, and the big bowl of filling ready to go. You can also use the egg yolk (not whites) to help seal the papers. Using whatever technique you want to, you can now wrap all of the dumplings until you run out of wrappers or filling! See the recipe description above for some advice and resources on how to wrap the dumplings correctly
6

Cook or Store Prepared Dumplings

At this point, you can store any dumplings you don't want to cook immediately. Simply add them in a ziplock bag or Tupperware container and put them in the freezer - that's it! For the dumplings that you want to cook, bring a large pot of water to a boil. Add the dumplings into the pot and cook until they start to float. Once the dumplings are floating, they are ready to go and eat!
